Makes :1cup
Ingredients:
Tamarind Extract: 2 tbsp
Water: 1.5 cups
Red chili powder: 1 tsp
Cumin powder: 1 tsp
Jaggery powder: 1/2 cup packed
Salt to taste
Method:
Boil the water and add the tamarind extract. Add all the spices except jaggery powder. Let it reduce by a half a cup and add jaggery. Keep boiling until you see the spoon is coated lightly. Overall, the chutney should be close to a cup.
Turn off the stove and let it rest.
The chutney will thicken once it gets cold.
