Ingredients:
To marinate:
Chicken: 500 gms
Egg : 1
Corn starch/flour : 1/4 cup
Black pepper grounded:1/2 tsp
Baking Soda : 1 tsp
Salt to taste
For Sauce:
Red chili paste : 1.5 tbsp
Soy sauce: 1 tbsp
Rice vinegar: 2 tbsp
Corn starch/flour: 1 tsp
Chicken or Vegetable stock: 1/4 cup (you can use water if you don't have stock).
Others:
Oil : 1 tsp
Red hot oil : 3 tbsp
Dry red chilies: 6-7
Garlic: 4 cloves minced.
Method:
Take all the ingredients under marinate and rest it for 10-15 minutes.
Heat oil for deep frying and fry the chicken in 2-3 batches until the chicken is golden brown.
Heat oil and hot oil in a pan, add red chilies and sauté for 30 seconds. Add garlic and sauté for 10 seconds. Add the sauce and mix well. Cook for 1 minute and add the fried chicken, toss well and turn off the heat.
Serve hot with white or brown rice.
