Cook Time: 15 minutes
Sweet potatoes: 3 medium
Sugar : 1/2 cup
Ghee : 4 tbsp + 1tbsp to fry nuts
Green Cardamom : 3 crushed/powdered
Milk : 3/4 cup + 1 tbsp to soak saffron
Saffron: a pinch
Cashews : 10-12 halved
Pressure cook the sweet potato for 3-4 whistles or boil them. Peel and mash the potatoes.
Heat ghee in a pan and add the mashed potatoes and sauté for 3-4 minutes. Add milk,1/2 cup water and sugar. Mix well and cook for 4-5 minutes stirring in between. Add the soaked saffron and cardamom powder and stir well and cook until halwa leaves the sides of the dish( about 5-6 minutes)Turn off the heat.
Heat a small pan and add 1 tbsp of ghee and fry the nuts and add them to the halwa.
