Cook Time: 25 minutes
Serves: 4-5
Ingredients:
Rice : 2 cups
Coconut milk: 3.5 cups
Coconut: 2 tbsp sliced pieces
Cashews: 2 tbsp
Onion : 1 sliced
Green chilies: 6-7 slit
Cloves : 7
Green cardamom: 4
Star anise: 1
Cinnamon stick: 2" piece
Bay leaf: 2
Ginger garlic paste: 1 tbsp
Garam masala: 1 tsp
Ghee : 2 tbsp
Salt to taste
Method:
Clean and soak rice for 30-40 minutes.
Heat ghee in a vessel and add cloves, cinnamon stick, bay leaves, cashews, star anise and cardamom. Sauté for 2 minutes. Add green chilies and sauté for 1 minute, add onions and fry till they turn translucent. Add ginger garlic paste and fry for 30 seconds. Add coconut pieces and fry for 1 minute.
Add the coconut milk and bring it to a boil. Drain rice and add to the milk. Cover the lid, bring it to boil again, simmer and cook until the rice is completely done(should take about 5 minutes).
Turn off the stove, leave the lid for 5-10 minutes before opening the lid.
Serve hot with raita.
