Pav Bhaji

Preparation Time: 10 minutes 
Cook Time: 10 minutes 
Serves: 4-5

Ingredients:

Veggies to pressure cook or Steam:
Cauliflower: 2 cups 
Potatoes: 3 large 
Beans : 1/2 cup 
Carrots: 2 medium 

Other: 
Onion : 1 medium chopped 
Tomato: 1 medium chopped 
Green pepper/capsicum: 1 medium chopped 
Peas: 1 cup 
Ginger garlic paste:1tsp
Green chili : 1 chopped 
Turmeric: 1/2 tsp 
Red chili powder: 1 tsp (you can lower this if you want it milder)
Coriander powder: 1/2 tsp 
Pav Bhaji Masala: 3 tsp 
Butter : 2 tbsp + 2 tbsp to top off
Salt to taste 

Pav's : 12
Butter : To toast.

Method:

Take all the veggies that need to be steamed/pressure cooked-  wash, peel the potatoes and cut them into bite size pieces. Add a pinch of salt and cook them until they are completely cooked.

Heat butter in a pan and add green chilies and onions and sauté them till the onions turn translucent. Add turmeric and tomatoes, cook for 2 minutes. Add green pepper and cook for 1 minute. Add  all the spices, mix well and add the cooked vegetables. Mash them with the potato masher until they are soft but not mushy. Add peas and Cook for 2 minutes. Add 1/4 cup of water if needed and mix well. Add the rest of butter now.
Turn off the heat and serve hot with toasted Pav. You can add raw onions and some lemon juice too if you like.
