Mexican Rice

Preparation Time: 5 minutes 
Cook Time: 20 minutes 
Serves: 3-4


Long grain rice: 1.5 cups 
Onion : 1 cut in half and sliced 
Green pepper: 1chopped 
Tomato: 2 large chopped 
Green chili or Jalapeño: 1 chopped 
Peas : 1/4 cup 
Corn : 1/4 cup 
Butter : 2 tbsp 
Red chili powder or paprika: 1 tsp 
Salt to taste 
Sharp cheddar cheese: 1/2 cup 
Water : 3 cups 

Heat the butter in a pan and add onions, peppers and green chili. Sauté till the onions turn translucent. Add tomatos, peas and corn and cook for 1 minute. Add rice and fry for 2 minutes. Add water, salt and paprika, mix well and close the lid. Cook for 14-15 minutes. Simmer and cook until all the water is evaporated (about 2-3 minutes). 

Turn off the heat, mix cheese and serve hot with beans or by itself.
