Chicken and Vegetable Stir Fry with Rice

I tried this dish when we were traveling on a cruise. I loved how the chefs there were making customized dishes with minimal ingredients and time it took was no more than 6-7 minutes per person. 

So, I tried to adapt the same method and it came out really well.

Make sure to cook the entire dish on high heat.

Preparation Time: 5 minutes 
Cook Time: 10 minutes 
Serves: 3-4

Ingredients:
Rice : 1.5 cups
Chicken : 500 gms
Onion: 1 cut in half and sliced 
Carrot: 1 julienne strips 
Green pepper/Capsicum: 1/2 sliced
Green onions/Scallions: 2 chopped 
Soy sauce: 1 tbsp 
Chilli garlic paste: 3 tbsp 
Black pepper: 1 tsp 
Salt to taste 

Method:

Cook rice and let it cool a little.
Heat oil in a wok or a wide pan on high heat and add onions, fry for 1 minute and add chicken. Add salt and pepper, mix well and sauté for 1 minute. Close lid and cook for 3 minutes. Open lid, stir fry for 2 minutes. Add the veggies and fry for 1 minute. Add rice to the wok and toss well, add sauces. Mix well cook for 2 minutes and turn off the stove.
Serve hot garnished with scallions.
