Badusha/Balushahi - Indian Sweet

This is a very famous sweet across India, in South India it's known as Badusha and North India Balushahi.
The sweet is flaky on the outside and juicy inside melting in your mouth.

Preparation Time: 10 minutes 
Resting Time: 20 minutes 
Cook Time: 6-7 minutes per batch 
Makes : 25 Badushas

Ingredients:
Maida/All purpose flour: 2 1/2 cups 
Fresh curd/Yogurt: 1 cup
Butter or Ghee : 50 gms
Baking Powder: 1/2 tsp 
Baking soda: 1/4 tsp 

For Syrup:
Sugar : 2 1/2 cups 
Water : 1 1/2 cups 

Method:

Take Maida, baking soda andbaking powder in a mixing bowl and sieve well. Add butter/ghee and work it into the flour. Add yogurt and mix to make a dough. Don't overdo. Just kneed enough with your fingers to form a dough.
Cover and let it rest for 20 minutes.
Heat sugar and water mixture in a pan.
Take the dough, make a small lemon size balls and flatten it. Make a thumbprint in the middle.
Heat oil for deep frying, fry the Badushas 5-6 at a time as they will double in size. Keep it on low heat and fry until golden brown. 
By now, your sugar syrup should be ready to a one string consistency.
Drop the fried Badushas into sugar syrup and let them soak for 5-6 minutes.
Let the Badushas cool off for 1-2 hours before serving.
