Boondi is a savory dish that can be eaten by itself or served with raita, vegetable fry. The crispy boondi over the dishes will taste really good.
Preparation Time: 10 minutes
Cook Time: 4 minutes per batch
Ingredients:
To make the batter:
Besan/Senagapindi: 1 and 1/4cup
Rice Flour/Biyyappindi: 1/4 cup
Water : 1 cup
Jeera/ cumin: 1/2 tsp
Red chili powder: 1 tsp
Salt to taste
Curry leaves: 1 sprig
Peanuts: 1/4 cup
Method:
Mix all the dry ingredients for batter and add slowly add water so no lumps are formed.
Heat oil for deep frying and take a laddle with big holes and pour the batter over it on top of oil to make boondi. Fry for 3 minutes and take them in a laddle to drain. Continue the process till all the batter is done.
Fry curry leaves and add them to boondi. Add peanuts and fry for 3-4 minutes and add them to boondi. Make a powder of jeera, add that salt and red chili powder to boondi. Mix well.
Store in an airtight container up to 2 weeks.
