Hubby was asking for seconds. Kids really loved it.
Preparation Time: 10 minutes
Cook Time: 30 minutes
Serves: 4
Ingredients:
Basmati Rice: 1.5 cups
Onion : 1 large cut in half and slice
Potatoes: 2 diced
Tomato: 1 chopped
Green chilies: 6-7 slit
Coriander leaves/cilantro: 1/2 chopped
Mint/ Pudina: 1/2 cup chopped
Ginger garlic paste: 1 tbsp
Turmeric: 1 tsp
Garam masala: 1 tsp
Coconut milk: 1 cup
Salt to taste
For Tempering:
Cloves: 5
Elachi/Green cardamom: 2
Cinnamon/Dalchini: 1" stick
Cumin seeds: 1 tsp
Fennel seeds: 1 tsp
Method:
Wash and soak rice for 30 minutes.
Heat 3 tbsp of ghee in a pan and add the ingredients for tempering. Fry for 1 minute.
Add green chilies and fry for 1 minute. Add onions and sauté till they turn translucent. Add turmeric and ginger garlic paste and mix well.
Add tomatos and cook until they are mushy. Add coriander leaves and mint, mix well. Add potatoes, salt garam masala and cook for 3 minutes.
Pour 1 cup coconut milk, 1and 3/4 water in a rice cooker, add the potato masala bring it to a boil and add the drained rice. Let the rice cook till the warm light comes, take the plug off. Let it rest for 5 minutes before serving.
Serve hot with raita.
