Ingredients:
Bendakaya/Okra/Bhindi : 500 gms
Onion : 1 medium chopped
Red chili powder: 1 tsp
Turmeric: 1/2 tsp
Cumin coriander powder: 1 tbsp
Salt to taste
To powder in a blender:
Roasted Peanuts: 3 tbsp
Roasted Til/Sesame seeds/Nuvvulu: 2 tbsp
Puffed Bengal gram/Putnalu: 1/2 cup
Cumin seeds/jeera : 1 tsp
Method:
Clean the bindi and cut both edges. Slit open only one side to fill the masala as shown in the picture.
Take the ingredients listed to make a powder and blend them together to make a powder. Mix salt, cumin coriander powder and red chili powder.
Stuff the mixture into Bhindi's.
Heat oil in a wide pan or a wok and add onion, a little salt and turmeric. Sauté till they turn translucent. Add stuffed Bhindi's and toss well. Fry for 2 minutes, close lid and cook for 3 minutes. Take the lid off, cook for 5 more minutes on low flame add the rest of the masala powder on top, toss well to coat.
Turn off the stove and serve hot with rice or roti.
