Sesame Chicken

Sesame chicken is a sweet and spicy Chinese dish where chicken is marinated in a batter, deep fried and the sauce is cooked separately and poured over the fried chicken.
Toasted sesame seeds are used as a topping. The dish is generally served with white or brown rice with some steamed broccoli.

Preparation Time: 10 minutes 
Marinate Time: 20-25 minutes 
Cook Time: 20 minutes 
Serves: 3-4

Ingredients:

For marinade:
Chicken thighs/breast boneless: 1 kg
All purpose flour: 2 tablespoons 
Corn starch/Corn Flour: 2 tablespoons 
Soy sauce: 2 tablespoons 
Sesame oil: 1/2 teaspoon 
Baking powder: 1/4 teaspoon 
Baking soda: 1/4 teaspoon 
Vegetable oil: 1 teaspoon 
Water: 2 tablespoons 
Salt : 1/2 teaspoon 

For sauce:
Chicken broth: 1 cup 
Water: 1/2 cup 
Vinegar: 1 tablespoon 
Corn starch: 1/4 cup
Sugar : 2.5 teaspoons
Soy sauce: 2 tablespoons 
Sesame oil: 2 tablespoons 
Chili garlic paste: 2 teaspoons
Garlic: 1 clove minced
Salt : to taste 

Other:
Sesame seeds: 2 teaspoons toasted for topping.

Method:
Take all the ingredients listed under marinade, mix well and refrigerate for 20-25 minutes.
Heat oil for deep frying and fry the chicken until they turn golden brown. This should take 6-7 minutes per batch.
Take all the ingredients listed for sauce, mix well and put it on the stove and keep whisking as needed so no lumps are formed. Turn off the stove once the sauce is thick. This should take about 10 minutes.
Take the sauce and pour over the fried chicken. Top the dish with toasted sesame seeds.
Serve hot with rice.
