Fried Jalapeño Coins

I was at Red Robin and ordered a Southwest Chicken Salad, it came with these yummy crispy fried jalapeño coins.

There are not many ingredients I tasted in it, so I planned on to give it a try. They turned out really well. Family really enjoyed them.

Preparation Time: 10 minutes
Cook Time: 10 minutes
Serves : 2-3

Ingredients:

Jalapeños: 5 cut into coins as shown in the picture. About 1/8 of an inch.
All purpose flour: 1/2 cup
Baking powder: 1 teaspoon
Garlic powder: 1/4 teaspoon
Red chili powder: 1/2 teaspoon
Ground black pepper: 1/4 teaspoon
Chilled water : 1/2 cup
Salt to taste

Method:

Mix all the dry ingredients, add water and make a soft batter.
Heat 1 cup of oil for deep frying in a small pan, add the jalapeño coins to the batter and fry in batches. Fry till the coins turn golden brown on both sides.
Drain on a paper towel for 2 minutes.
Serve with salad or as an appetizer with southwest dressing.
