Egg Fried Rice

Preparation : 20 Minutes
Cooking : 15 Minutes
Serves : 5-6

Ingredients :

Long grain rice/ Basmati Rice : 1.5 cups 
Water : 3 cups

Onion : 1 diced
Carrot : 1 cut julien ( thin strips)
Green Pepper/ capsicum : 1 diced
Green onion/ scallions : 2 chopped
Eggs : 4
White pepper : 3 tsp
Black pepper : 3 tsp
Red chili paste : 1 tsp
Vinegar : 1 tsp
Soy sauce : 1 tsp
Salt to taste
Oil : 2tbsp

Method

Cook rice and cool it for 15-30 minutes. Left over rice works out well too.

Add pepper (1tsp each) and salt to a bowl and mix eggs to it. Heat a pan and make egg scramble.
Heat a pan on high heat and add oil. Add all veggies and cook for 3-4 minutes. 
Add all the spices and sauces and mix well.
Now add rice and mix well. Cook for 1 minute and turn the heat off. 
Garnish with scallions and serve.
