Peanut Chikki/ Peanut Brittle

Peanut Brittle is one of the famous snacks in Andhra. It's made of roasted peanuts, jaggery and a little bit of sugar.

The flavors come from jaggery syrup and green cardamom powder. This is a must try recipe.

Preparation Time: 15 minutes 
Cook Time: 15 minutes 
Makes : 13x9 pan size brittle 

Ingredients:
Peanuts : 1 cup 
Jaggery: 1 cup 
Sugar : 1/4 cup 
Elachi/Green cardamom: 3 powdered
Water: 1/4 cup 
Ghee : 2 teaspoons

Method:

Dry roast the peanuts for 7-8 minutes, turn off the stove and peel the skins off.
Heat ghee in a wide pan, add jaggery and sugar. Let it melt for 2 minutes and add water. Cook the syrup bubbling for 7-8 minutes until if you drop the syrup in water, you should be able to form a soft ball.
Add the peanuts and mix well. Cook for 5 minutes on low heat and turn off the stove.
Place an aluminum foil in a baking sheet and pour the peanut mixture over it.
Let it cool for 30 minutes before breaking the brittle. 
Store in a airtight container for 2 weeks.
