Makes : 1 cup of pesto.
Fresh Basil leaves: 2 cups
Grated Parmesan-Reggiano cheese : 1/2 cup
Pine nuts : 1/3 cup
Olive oil: 1/2 cup
Garlic: 3 cloves minced
Ground black pepper: 1 teaspoon
Salt to taste
Add basil leaves and pine nuts in a food processor and use the pulse option to smoothen them, add garlic and cheese and pulse 5-6 times so everything mixes. Scrape the sides and oil, salt and pepper. Pulse 5-6 times until you see a corse paste.
Pesto is ready to use in pasta or as a side.
Store in an airtight container for 3-4 days.
