Spinach and Tomato Bruschetta

Bruschetta is an Italian Snack/Appetizer where olive oil and toppings are arranged on bread and grilled or baked.
I made it with Italian bread, spinach, tomatoes, mozzarella cheese blend and baked it. Topped it off with olive oil and Parmesan cheese.
It's super easy to make and serves as a good party starter.

Preparation Time: 10 minutes 
Bake Time: 15 minutes 
Makes : 12 pieces 

Ingredients:
Italian bread : 1 loaf cut into 1/2" pieces 
Baby Spinach: 1 cup
Tomato: 2 diced
Mozzarella cheese blend: 2 cups
Olive oil: 2-3 drops per piece 
Parmesan cheese: To garnish ( 1/2 cup)

Method:

Pre heat the oven to 350 degrees F.
Line the baking sheet with aluminum foil or parachment paper.
Lay the bread pieces on the sheet, arrange 4-5 spinach leaves on each piece, 6-7 tomato pieces, 1 tablespoon of cheese and bake for 15 minutes.
Take them out of the oven, drizzle olive oil and add Parmesan cheese to top it off.
Serve immediately.
