Nasi Goreng - Indonesian Fried Rice

Nasi Goreng means fried rice in Indonesia. This dish is very famous in Malaysia, Singapore and Southern Thailand too.
Traditionally, the dish is made with Chicken and Shrimp in it and topped with fried egg.
Use warm or cold rice for best result.

Preparation Time: 10 minutes 
Cook Time: 15 minutes 
Serves : 4

Ingredients:

Long grain rice : 1 1/2 cups
Sesame oil: 2 tablespoons
Onion : 2 medium chopped finely 
Garlic: 3 cloves chopped 
Ginger: 1" piece chopped finely 
Corn kernels: 1 cup 
Grated coconut: 1/4 cup 
Red chili paste (Sambal oelek) : 4 teaspoons 
Soy sauce: 1 tablespoon 
Brown sugar: 1 teaspoon 
Salt to taste 
Cashews : 3 tablespoons fried to garnish 
Green onions/ Scallions: 3 chopped 
Tomato: 1 sliced 

Fried eggs:
Eggs : 4
Pepper: 1/2 teaspoon per egg
Salt to taste 

Method:
Cook rice with a teaspoon of oil and 2 1/2 cups of water. Let it cool off.
Heat oil in a wok and add ginger garlic and onions. Sauté till they turn translucent. Add sugar, salt, corn and mix well fry for 2 minutes. Add coconut and fry for 30 seconds. Add red chili paste, fry for 1 minute. 
Add rice and soy sauce, mix well and fry for 2-3 minutes. Add the fried cashews and scallions.
Fry each egg separatly with salt and pepper.
Serve the Nasi Goreng topped with fried egg and sliced tomatoes.
