Curry Rice Pilaf

This rice pilaf is made with Indian curry powder. The pilaf is quick and easy to make but tastes delicious.
This pilaf is a good one for lunch boxes too.

Preparation Time: 10 minutes 
Cook Time: 25 minutes 
Serves: 3-4

Ingredients:
Basmati Rice: 1.5 cups
Onion: 1 medium chopped 
Garlic: 3 cloves 
Turmeric: 1/2 teaspoon 
Curry powder: 2 teaspoons
Lemon zest : 1/2 teaspoon 
Butter : 1 tablespoon
Olive oil: 1 tablespoon 
Salt to taste 
Water : 3 cups 
Lemon juice: 1 teaspoon 
Cilantro/ coriander leaves: 1/4 cup chopped or 7-8 sprigs 
Cashews: 4 teaspoons fried

Method:
Heat oil and butter in a pan and add garlic, onion, lemon zest and fry for 3 minutes. Add salt, turmeric and curry powder and fry for 1 minute.
Add the rice and fry for 1 minute and add water, bring it to a boil and close lid and simmer the stove. Cook for 15 minutes or until the rice is done.
Turn off the stove, wait for 5 minutes, open lid and fluff the rice with a fork and add lemon juice, cilantro and cashews. Serve hot.
