The fried rice is filled with veggies so it's healthy and a great one for lunch boxes too as kids love it.

Serves : 4-5
Long grain rice : 1 1/2 cups
Onion: 1 sliced thinly
Capsicum/Green pepper: 1 sliced
Cabbage: 1/2 cup shredded
Garlic: 5 cloves sliced thinly
Chili garlic sauce: 4 teaspoons
Soy sauce: 2 teaspoons
Rice vinegar: 1 teaspoon
Salt to taste
Cook rice and let it cool off for at least a half an hour.
Heat 3 tablespoons of oil in a wok and add garlic, after 30 seconds, add all veggies and sauté on high heat for 4-5 minutes.
Add chili garlic sauce, mix well and add rice. Add soy sauce, salt and vinegar. Mix well and cook on medium for 3 minutes.
Turn off the stove and serve hot.
