I - Iguru Karam

Iguru Karam is a spice that we use in dry curries/dishes especially fries in Andhra cuisine. Fry is called Iguru in Telugu. Rather than using red chili powder or chilli flakes, using this karam enhances the flavor of the dish.

Preparation Time: 5 minutes 
Cook Time: 2 minutes 
Makes : 1/2 cup

Ingredients:

Dry red chilies: 20
Jeera/Cumin seeds : 1 teaspoon 
Garlic: 4 cloves 
Salt : 1/4 teaspoon 

Method:
Dry roast red chilies and jeera for 2 minutes. Let it cool and grind them into a coarse powder. Add garlic, salt and grind again.
Store the karam in an airtight container for 1 month.
