L - Lauju/ Laskora (Kobbari Lauju/ Coconut Balls)

Lauju/ Laskora (Kobbari Lauju/ Coconut Balls) is a quick and easy Andhra sweet once you have the coconut grated. 

There are some variations in making this sweet where some make with sugar and some go with Jaggery/bellam. Mom always made these with Bellam and I love that version as it also gives the balls a nice golden color. It's much more healthier than using sugar.

Preparation Time: 10-15 minutes 
Cook Time: 10 minutes 
Makes: 8 balls 

Ingredients:
Grated coconut: 1 cup
Grated Jaggery/bellam: 3/4 cup
Elachi/ green cardamom: 3 powdered

Method:

Heat a pan and add coconut and jaggery to it and fry till golden brown, this should take 6-7 minutes on low to medium heat.
Add cardamom powder, mix well and cook for 30 seconds. Turn off the stove and let it cool off so it's warm. Make the round or oval shaped balls.
Store in a airtight container for 2 weeks.
