Masala Pav - Mumbai Street Food

Masala Pav is famous now a days in several cities but it's originally from Mumbai. The ingredients list is very similar to Pav Bhaji but the method of preparation is completely different and hence the taste too.
This is much more quicker and if you have pav's (buns) on hand, it's really easy to make and serve the dish in less than 30 minutes.

Preparation Time: 10 minutes 
Cook Time: 15 minutes + 2 minutes per Pav 
Serves: 4-5

Ingredients:
Pav (Bun) : 8 
Butter: 3 tablespoons + To toast the buns
Onion : 2 medium chopped finely 
Tomato: 2 chopped finely 
Capsicum/ green pepper: 1 large chopped finely 
Ginger: 2" piece minced
Garlic: 6 cloves minced
Green chilies: 6 chopped finely 
Jeera : 1 teaspoon 
Red chili powder: 1 teaspoon 
Pav Bhaji Masala: 4 teaspoons
Turmeric: 1/2 teaspoon 
Salt to taste 
Water : 1/2 cup 

To Garnish:
Onion 
Cilantro/Coriander leaves
Kala Namak/Black Salt

Method:
Heat butter in a large fry pan and add jeera. Fry for 1 minute until they splatter. Add ginger, garlic and green chilies and fry for 1 minute. Add onion and sauté till they turn translucent.
Add all the spices, mix well and fry for 1 minute. Add tomatoes and cook until they turn mushy. 
Add capsicum and cook for 3 minutes until they are done. 
Add water and cook until the masala is thick again for 3 minutes.
Push the masala to a side, add little butter and toast the Pav on both sides in batches. Place the masala on top of the Pav, garnish with above listed ingredients and serve hot.
