Spinach Frittata

Frittatas are thick omelet which is baked by adding veggies, meat and cheeses of your choice. These make a healthy breakfast or brunch dish. I love making frittatas as I can add a bunch of veggies and kids can't notice them so they eat a healthy and filling breakfast.

Preparation Time: 10 minutes
Cook Time : 10 minutes
Bake Time : 15 minutes
Serves : 4-5

Ingredients:

Onions : 2 medium chopped
Green pepper: 2 large chopped
Potatoes: 2 large diced
Spinach : 1 large bunch/ 2 cups chopped
Scallions/green onions: 3 chopped
Eggs : 12
Parmesan cheese : 1 cup shredded
Coriander powder: 1 teaspoon
Ground Pepper: 2 teaspoons
Salt to taste
Butter : 2 tablespoons

Method:

Heat butter in a 12" skillet, add onions and potatoes. Sauté for 3 minutes until the onions turn translucent.
Add green peppers and sauté for 2 minutes.
Add spinach and white part of scallions and sauté for 2 minutes. Turn off the stove.
Beat 12 eggs in a large boil, add spices and cheese. Pour this mixture over cooked veggies and mix well.
Pre heat oven to 375 degrees Fahrenheit.
Place this skillet in the oven and bake for 13-15 minutes or until the egg is done. Don't let the top brown.
Cut it into pieces and serve hot.
