Green beans with caramelized onions and garlic is a simple to make side dish for Christmas. I love these green beans as they are crisp and crunchy even after cooking them.
Preparation Time: 10 minutes
Cook Time: 30 minutes
Serves : 5-6
Ingredients:
Fresh Green beans : 500 grams
Onions : 2 large sliced (white onions preferably)
Garlic cloves: 6 sliced
Dry Oregano: 1/2 teaspoon
Dry Rosemary: 1/2 teaspoon
Dry Marjoram: 1/2 teaspoon
Ground pepper: 1 tablespoon
Butter : 3 tablespoons
Salt to taste
Method:
Wash and cut the tops off for the beans. Do not chop the beans.
Add 2 liters water in a saucepan and bring it to a boil.
Add the beans and little salt.
Bring it back to a boil and cook the beans for 3-4 minutes.
Drain the beans and add cold water to stop cooking.
Heat butter in a pan and add the cloves. Sauté for 1 minute until they are golden brown, take them in a plate.
Add onions to the pan and sauté them on low heat for 20-25 minutes until they are brown and caramelized. Do not over cook as the onions turn tart.
Add the boiled beans, spices, salt, pepper and sauté for 3 minutes.
Turn off the stove and top off with garlic cloves.
Serve hot as a side dish or as is.
