Drumstick/Mulakkaya is a vegetable that is commonly found in Asia and parts of Africa, being a vitamin C and potassium rich vegetable, the leaves of the tree also has a lot more health benefits.
If you are living in India, it's easy to find fresh drumsticks, in US I had to rely on frozen ones for several years but now I can find the fresh drumsticks in Indian stores.
Preparation Time: 10 minutes
Cook Time: 25 minutes
Serves : 2-3
Ingredients:
Drumsticks/Mulakkaya: 2 peel the excess skin off a little and cut into 3" pieces
Onion : 2 large
Garlic: 3 cloves
Turmeric: 1/2 teaspoon
Urad dal/Minappappu: 1 teaspoon
Mustard seeds/Aavalu: 1/2 teaspoon
Curry leaves: 1 sprig
Green chilies: 3 slit
Red chili powder: 1 teaspoon
Coriander powder: 1/2 teaspoon
Cumin powder: 1/2 teaspoon
Salt to taste
Water : 3/4 cup
To make a slurry:
Rice flour or Besan : 1 tablespoon
Warm milk: 3 tablespoons
Method:
Heat oil in a pan, add mustard seeds and Urad dal. Fry for 1 minute until they splatter. Add green chilies, garlic and curry leaves, fry for 1 minute. Add drumstick pieces and fry for 2 minutes.
Add onion, turmeric and sauté till they turn translucent.
Add salt and red chili powder, mix and cook for 2 minutes. Add water, close lid and cook on low flame for 8-10 minutes until all the water is pretty much absorbed and the drumsticks cooked. If needed, add a little more water. Add coriander and cumin powders, mix well.
Make the slurry and add it to the curry, cook for 2 minutes and turn off the stove.
Garnish with cilantro and Serve hot with rice.
