N - Nallakaram

Nallakaram is a karam or podi that's made with tamarind, dry red chilies and curry leaves as a base.
This karam has a lot of health benefits, they feed this karam with rice and ghee to new moms. It also helps reduce with stomach issues.

Preparation Time: 10 minutes 
Cook Time: 5 minutes 
Makes : 1 Cup

Ingredients:

To roast:
Oil: 2 teaspoons 
Dry red chilies: 8
Coriander seeds/Dhanialu: 1/4 cup
Chana dal/Senagapappu: 1 tablespoon 
Urad dal/Minappappu: 1 tablespoon 
Fenugreek Seeds/Methi : 1 teaspoon 
Curry leaves: 3 sprigs

Others:
Tamarind/Chintapandu: Size of a small lemon
Garlic: 10 cloves 
Turmeric: 1/2 teaspoon 
Salt to taste 

Method:

Heat oil in a pan and fry the seeds till golden, add red chilies and fry for 1 minute. Take them into a plate.
Fry curry leaves until they are wilted and turn off the stove.
Take all the seeds and red chilies and grind to a coarse. Add tamarind and grind to mix well, add curry leaves, salt  and garlic and grind again.
The karam will be a little coarse. Store in an airtight container for 2 months.
